A gourmet’s breakfast – thank you Judy, once again, for sending me this Greek recipe

Apricots from our tree stuffed with homemade halloumi rolled in a small amount of olive oil (sadly not homemade oil)

I sprinkled salt and pepper on the top and popped them under a hot grill for 8 minutes until the halloumi was charred

Then I drizzled some Gables honey over them

And took out two to eat for a late breakfast (I might have to eat a third one!)

  1. Gill, your photos of abundant apricots made me search for them while doing my weekly order. Sainsburys had no apricots at all.
