A new departure – Gables Goats cheese

Take a quart of milk and heat slowly to 180 degrees

Add lemon juice and white vinegar and stir and leave in pan for 30 minutes

Pour the mixture into a colander lined with two layers of cheesecloth (I used baby muslins) and stir in half a teaspoon of salt

Tie up and leave to drip over a bowl. The whey will gather below and the curds remain in the cloth

Unwrap and roll the cheese and flavour with herbs or leave plain

This cheese is flavoured with Za’atar

Wrap in waxed paper and refrigerate. Eat whenever!
