I couldn’t deal with an ottolenghi recipe with his lists of herbs and spices and more. So, as I am now cooking for six for the foreseeable future. This is the first Corona Shabbat together and I have been cooking since 7 am and now need a cup of coffee

Onions sautéed in some oil then add cumin, and any spices you fancy, veg stock and simmer until soft. Nutritious and easy.
Potato kugel (right of picture). Grated potatoes, grated onion, eggs, little oil and matzo meal (or flour) and bicarbonate of soda, salt and pepper – filling
Leek bake. Sauté leeks until soft in veg stock. Drain but keep stock and cook until reduced. leeks in dish, thin layer of cheese, pour on reduced stock top with breadcrumbs mixed with grated cheese and olive oil and bake. Everything can be adapted as to what you have at home.
