Time to make elderflower cordial

The elder trees are heavy with fragrant white clusters of flowers, the sun is shining and it has been dry for several days.  It is perfect weather for picking elder flowers and making cordial.  


I heated a sugar and water mixture and brought it to the boil.  I added citric acid and lemon zest and lemon slices and 25 carefully washed and trimmed elderflower heads to th hot syrup.  The mixture must now sit for 24 hours and then be strained through a clean tea towel until each precious drop has been collected.  Then it’s time to bottle it and freeze it or store in the refrigerator.

  1. I used to make elderflower champagne when I lived in Sussex (to a recipe in Farmer’s Weekly). Very pleasant!
