Hooray…..dairy free chocolate chip cookies!

I found a recipe online and halved the quantities for the first experimental batch.  I also cut down on the amount of sugar suggested.  I used just under half a cup of sunflower oil and just over half a cup of golden caster sugar.  Mix together sugar and oil.  Then add a teaspoon of vanilla essence and one large egg.  Mix well (I just use a fork as I don’t like washing up “equipment” such as mixers or whisks).  Then add one and a half cups of plain flour in which is mixed one teaspoon of salt and one teaspoon of bicarbonate of soda.  Mix well into the wet mixture and lastly add one cup of chocolate chips.  I used a bar of bournville that was in the cupboard.  I chopped up the squares.  In future I will use a dark chocolate such as Green and Blacks which does not contain palm oil or vegetable fat. Place spoonfuls on a lined baking sheet (I used two sheets lined with non stick parchment paper).  I placed the spoonful of mixture in my palm and rolled it around to make a ball to press onto the paper.  Then bake at 175 degrees for about 15 minutes or less depending on how brown you like the biscuits.  Enjoy with a cup of tea or coffee.
