I bought some more cooking apples from friend Kate as I found a tasty sounding recipe for a dairy free apple cake. Beat two eggs with 250 ml of sunflower oil. Add 300g of golden caster sugar a teaspoon of bicarb of soda, teaspoon of vanilla essence,1/2 teaspoon of salt, 275g plain flour and 500g of diced apples. Bake at 175 for 40 minutes. The recipe also added cinammon but I don’t like this spice so I left it out.


Don’t like cinammon!! I don’t believe it!!
