Inspired by Nadiya Hussain

Late last night I watched the second episode of the BBC travelogue…..The Chronicles of Nadiya which followed last year’s Bake Off winner, Nadiya Hussain, as she travelled to her native Bangladesh.  She spent time in her ancestral village and then journeyed around the country and at each place she cooked for the people that she met.  In the slums of Dhaka she made 300 coconut chapatis for poor children who are encouraged to go to school with the offer of a free (and sometimes their only) meal each day.  Nadiya made a dough from plain flour, water and salt and so that is what I made today and filled it with mixture of garlic, onions, spices, green beans and chopped and cooked potatoes. Instead of deep frying the chapatis I put them and some wraps on parchment paper, brushed them with beaten egg and cooked them in the oven.  Delicious.  Thanks Nadiya.
