For a glut of marrows, with more arriving by the day?

Please don’t suggest marrow and apple chutney. I still have jars dated 2011 because we prefer runner bean chutney, green tomato chutney and piccalilli. And there are only so many times that one can eat marrows stuffed with rice and veg.

Pasta sauce is good, melt with onion and garlic and serve with black pepper and Parmesan cheese. Also since you have fine eggs, cut thin slices dip them in egg and fry till crispy add chilly flakes. The rest to the compost!

I remember my Mum used to dice marrow in large chunks, boil lightly, and serve with some soured cream and rye seeds mixed in!
Am not a great fan of marrows. Compost heap? That’s what happens when you are over-productive. Send them out to Syria?
Save some for tomarrow!

We’ve been making marrow curry and couscous with other veg of course. Though Frank said his gran used to make marrow and ginger jam, lovely and golden and flavoursome. Bxx

Pain de courgette – fry oignons,shalotts and garlic + marrows – cook and stir well for the water to disappear (go off whatever you like!) – add eggs (depends on the amount of marrows – for 1 kg of marrows I would add 3 eggs) + grated cheese (italian, french, cheddar?) + salt, pepperand and nutmeg. Pour into a baking dish and 3/4 or 1 hour in the owen. Good with tomato sauce (home made of course) hot or cold.
One can add herbs if pleases – depends on tastes.
