Arrived home from the Wednesday walk to find a special delivery parcel.

Because I didn’t want to waste the egg yolks(the whites were used to make the macaroons)
I mixed some sugar, Ground almonds and cake matzo meal, lemon juice and eggs yolks. Baked for 20 minutes and when they came out of the oven I topped them with a mixture of lemon juice and caster sugar

I’m storing them in the freezer. Here’s hoping that they will defrost well next week
