How to use the fresh sweet corn before the cold night air ruins the cobs

Pick the corn
Boil two corns and scrape the kernels from the cobs. Then mix with two egg yolks and some flour and plenty of seasoning
Best the two egg whites until stiff and fold into the mixture
Fry in hot shallow oil until golden and crispy
Drain on kitchen paper and keep your hands off them until supper time!
