The salsify roots have flowered and what beautiful flowers they are – and edible too, apparently. The salsify is a root vegetable said to taste like oysters. As I have never eaten oysters I wouldn’t be able to confirm this but I find them fiddly to peel and pretty tasteless. Oysters?

Another strange feature of salsify flowers is that they open in the morning and close in the afternoon.
