Sow your seeds, weed carefully, watch the plants grow and in September dig up three of them to cook for supper

Salsify, a root vegetable that looks like a thin parsnip. It’s a member of the dandelion family and supposedly has a taste like oysters but I have never eaten oysters so how will I know if that is true? Tonight I will peel them and boil them and mash them with butter and cream and salt and pepper. If we leave them in the ground over winter they will sprout edible green tops.
