Dairy free lemon cookies……can be iced or not depending on taste.  These biscuits use two eggs, 3/4 cup sugar, zest and juice of one lemon, vanilla essence, baking powder and 1 and 1/2 cups plain flour. All the recipes I am following are butter and marge Free but still use eggs.  Our hens are well cared for and have plenty of space, love and attention.  I am happy to eat their eggs in return for board and lodging and a good home.  I hope that they agree that this a fair exchange.
