Dairy free crumble and happy cows

I am continuing to experiment with dairy free cooking.  Today I mixed rolled oats with brown sugar and sunflower oil.  I sprinkled the topping over a dish of finely sliced apples and put into the oven for 45 minutes.  Tasted yummy.   I might use less sugar and oil next time but its all a matter of trial and error and I am happy to carry out the “food tasting”.

As the crumble was cooking the cows were playing in the field as the sun went down.  Beattie has gone above and beyond the call of duty.  Earlier this afternoon I saw her licking Lexy (Lucy’s calf) all over, washing her and then just now she had both calves feeding from her udder.  Lexy on one side and Bella on the other.  Lucy, meanwhile, was happy to leave her sister to feed them while she went and munched on fresh hay.  Hmmm!
