Baffled by the Amaranths

These plants (started from seed in the polytunnel) have done so well in the raised bed but what can I do with them?  Mr Google suggests that the leaves should be stir fried but before the flower heads form and other sites want me to harvest the tiny seeds to make a grain that is gluten free.  But it all seems tricky and sticky and peculiar.  Anyone cooked this and if so how?
