Jeremy has planted out plenty of amaranth seedling plants in one of the raised beds.  It’s a leaf vegetable that I have never seen in any greengrocers yet there are sixty varieties of amaranth and several types  were eaten by The Aztecs and even used to make ritual drinks.  We are not proposing to perform any Aztec rituals at The Gables and the variety we are growing is used in stir fries or curries.  Interesting and almost too pretty to pick.
