A glut of cucumbers sent me to the Internet this morning  for alternatives to the salty pickles that we have aplenty. I found a recipe for cucumber pickle which uses 3lb of cucumbers, 3 large garden onions as well as sugar, vinegar and spices.  The sliced cucumbers and onions have to sit in salt for three hours and then be rinsed before the pickle can be made. Fingers crossed and any suggestions for other cucumber recipes gratefully received.
