My dear friend Joy came to the rescue with the recipe for her delicious almond cake – which uses four eggs.  Yesterday I gave six eggs to a friend in the village who runs the Wednesday walking group and today I had egg mayonnaise for lunch. There are still five eggs in the kitchen with more to come tomorrow. Good old hens.
